Lay out a large piece of non-greased paper on a flat surface. Lightly sprinkle it with sugar. Place your dough in the center, and use the paper to form it into a thick roll. Let it chill in the refrigerator for at least 5 hours before you start slicing it.

This is a very simple cake recipe and perfect for when you need to take a dessert to a party or picnic.

Makes 8 servings. Preparation time is 30 minutes.

Goji Berry Layer Cake

In another bowl, beat the egg whites until they are firm, then fold them into the batter. Grease two round cake pans, and pour the batter into each of them equally. Bake at 210C for about 20 minutes.

Turn off the heat, but leave both cakes in the oven for another minute. Then take them out, and let them cool for 2 more minutes before turning them out of their pans. Place one of the cake layers on a plate, and spread a layer of jam on the top. Let the cake cool for another 10 minutes after that.

Slice the bananas, and spread them out over the layer of jam. Whip the cream, and spread thickly over the slices of banana. Gently set the other cake section on top, but don’t press it down. Top the cake with the remaining whipped cream and decorate with slices of kiwi and the last of the Goji berries.

Makes between 4 and 6 servings. Preparation time is 40 minutes.

Goji: Nutritious Growing?

Largely unknown to westerners, the Gogi or goji plant has recently come into the limelight for the health benefits of its fruit. Better known in the West as the Wolfberry, the Gogi plant is a deciduous perennial shrub that can grow up to 3 meters high. Its scientific name is Lycum barbarum and forms part of Solanaceae, of which the tomato and potato are also members. While interest in the fruit of the Gogi is expanding, gardeners are also looking to cultivate the plant as an exotic addition to their collection.
Climatic and Soil Requirements
The Gogi plant is a very adaptable plant and grows in many temperate areas. Its origin is attributed to Mongolia and it is grown widely in Northwestern China. But, plants have been grown in the United Kingdom and the United States (mostly Utah) as ornamentals. In fact, the plant is well established in the UK where it was introduced in the 1730s. It is mainly found in hedgerows.
The Gogi plant grows well in a temperature range of between 1 degree Fahrenheit and around 100 degrees Fahrenheit. This makes it suitable for most temperate conditions. The Gogi plant is not known to be cultivable in balmy tropical conditions although the plant is said to be hardy and adaptable. The Gogi plant prefers full sunlight and will yield poorer results if shaded. Gogi bushes grown in climates that have warm, humid summers and crisp, cold winters are said to bear the most beneficial fruit with the highest levels of nutrition.
The Gogi plant does best in well-drained soils although other types of soil would suit it as well. It does not like waterlogged conditions, but.
Flowering and Fruiting
The Gogi plant starts flowering after two to three years. It produces purple and white flowers that are absolutely a pleasure to watch. The teardrop-sized fruits appear in late summer in the form of gorgeous, bright red berries. Tender care should be employed when collecting the fruits as they are easily hurt and blacken when roughed. The best way to harvest Gogi berries is to shake the plant and let the fruits fall on a mat. They can be scooped up by hand with sterile gloves.
Benefits of the Gogi Berry
Recently, the Gogi berry has been attributed the title of miracle food owing to its capacity to treat several conditions. But, these claims have yet to be proven. What is clear to us, is its extraordinary nutrient content. The following are the main attributes of a Gogi berry:
~ High protein content (about 12%)
~ Contains 11 essential and 22 trace minerals
~ 18 amino acids
~ 6 vitamins (including vitamins C and B2)
~ Essential Fatty Acids (e.g. linoleic acid)
~ Carotenoids (essential for manufacturing Vitamin A)
~ A high amount of calcium (up to 112 mg per 100g of Gogi berry).
~ A high amount of Potassium (up to 1132mg per 100g of Gogi berry).
~ Phenols that have anti-oxidant properties.
With such a nutritious content, the Gogi berry fits ideally into the Western diet as a precious supplement. The Gogi berry is consumed usually in its processed forms, that is, dried Gogi fruits or Gogi juice. It is rare to find fresh Gogi berry outside its main production regions in Asia unless one has a tree in their backyard.

100% Goji: Does it Matter?

The Goji berry has become the health craze of this new millennium. Health-conscious peoples across the world are wanting products derived from it. The extraordinary growth of demand for Goji berries have led to the proliferation of the number of products that are on the market.
Like all commercial products, but, the quality is never the same with all various brands of products. Essential variations can be found. So how can the consumer distinguish a high-quality product from a measly imitation? There are many factors to look at in determining the right 100% Goji juice from those fake formulas that do not give anything concrete in terms of health benefits.
There are four aspects of 100% Goji juice that the consumer has to bear in mind:
(i) The source of the ingredients-Goji plants are grown all over the world. But, the Goji plants grown in the Himalayan region and in Northwestern China are the ones that have the most beneficial constituents. Thus, the consumer should look for 100% Goji drinks which say that they bring their berries from China or Tibet.
(ii) The nature of the harvest-Goji berries are very tender and cannot handle mechanized harvesting. They easily get hurt and their contents oxidized. Look for 100% Goji companies that say that they hand-pick their fruits.
(iii) Organic farming-Goji berries like all crops can be grown intensively using modern production methods. Pesticides and herbicides will certainly result in greater yields but also produce lower quality fruits. Look for juice with the organic mark.
(iv) Presence of additional ingredients-look for substances such as artificial color agents or sweeteners. These are often only to improve the taste and are sometimes unhealthy. Avoid these color enhancers, sweeteners and pesticides.
A reputable 100% Goji company usually has full control over its production process from farming until it reaches supermarket shelves. 100% Goji juice implies no addition of any artificial substances and the absence of exposure to harmful chemicals such as pesticides and agrochemicals. It is only then that the it shall produce its best health effects. It has the following nutrient profile:
• Essential amino acids
• B-Complex vitamins
• Vitamin C
• Over 20 minerals including trace minerals that would normally not be in the human diet.
• Natural Vitamin E
• Beta-carotene and carotenoids (more than in carrots).
• Linoleic acid (an essential fatty acid)
100% Goji is often a tasteful product requiring no additional sweetening effect, unlike poor imitations. In the West, it is well loved as tonics and energy drinks. It is also used to enhance overall health and longevity. The ancient Asian healers used Goji along with other herbs to keep their tribes healthy.
Goji is also used in smoothies and cocktails for a novel and different taste. It is also a potent anti-oxidant super fruit. Diluted and adulterated products do not have the same anti-oxidant properties as 100% Goji when properly harvested an stabilized. Since there are no preservatives as such, 100% Goji has a low shelf life and should be used promptly after opening the bottle–about two weeks. But, if stored unopened it can be kept for longer.

Goji Scientific Research – Bogus Health Claims or Real Science?

The first natural healers in Asia prized its health secrets 4,000 years ago. But does the Goji Berry have any scientific standing?
Ancient medical texts declared Goji to be superior for tonifying and maintaining the health of the entire body. Today more than 80 scientific research studies have been published on its health-maintenance properties. They can be found at Pubmed, type in “Lycium Barbarum” (Goji’s latin name) into the search field.
Many prestigious journals around the world such as the British Journal of Nutrition, International Immunopharmacology, European Journal of Pharmacology, Chinese Oncology Magazine, China Pharmacology and Toxicology, Cell Biology International, Journal of Chinese Herbal Medicine, Nature Reviews Drug Discovery and the Physiology Academic Journal amongst others list the healing properties of the infamous Goji Berry.
It seems as if this sleeping giant breakthrough in health has hit the western world by storm. The Chinese have known about for ages and only now western science has uncovered that the Goji Berry contains a unique blend of “polysaccharides”. Called LB1, LB2, LB3, LB4 and LB5, these polysaccharides are responsible for helping in the healing process of the whole immune system, hence the numerous health benefits claimed by ingesting the berry. Furthermore, Goji’s polysaccharides command and control many of the body’s most vital biochemical systems. And thanks to its legendary ability to promote cheerfulness and improve mood, Goji has been dubbed the “pleased berry”.
The worlds leading authority on wellness endorses it. International media like Time Magazine, the Los Angeles Times and NBC’s today show praise the Goji Berry. New Woman magazine says that Goji is the latest Superfruit to take Hollywood by storm. . With so much to offer it’s no wonder that it has become a favorite food supplement for celebrities alike.
Extensive scientific research into the healing effects of the Goji Berry present numerous health benefits including; increased positive moods, a healthy libido, healthy blood pressure, healthy blood sugar levels, increased energy levels, helps anti-inflammatory processes, supports cardiovascular health, a greater resistance to fatigue, healthy liver function, improved memory, healthy immune system function, supports healthy aging and eye health.
Another fascinating tid bit of information on the berry is its above average ORAC (Oxygen Radical Absorbance Capacity) score. An orac measurement is a standardized test adopted by the U.S Department of Agriculture to measure the total antioxidant potency of foods and nutritional supplements. The Goji Berry has the highest score of 25,300 with the prune fruit 5,700 lagging way behind. Antioxidants can help support and protect cells against free radical hurt.
The latest Goji Scientific research is promising. After 4000 yrs something as ancient as the Goji Berry is still making headlines around the world.

Nutritional Properties of Goji Berries

Many of the legendary health-giving properties of goji berries are today being confirmed in modern scientific studies, and this has led to the possibility of even more far-reaching benefits.
Both species of Goji are deciduous woody perennial plants, growing 1-3 m high. L. chinense is grown in the south of China and tends to be somewhat shorter.
In addition to being cultivated in China, Goji berries also grow on extensive vines in the sheltered valleys of the Himalayas in Tibet, and in Mongolia. The round, red Goji berries are very tender and must be shaken from the vine rather than picked in order to avoid spoiling.
The Goji fruits are preserved by slowly drying them in the shade. Goji has been eaten locally in the Himalayan and Tibetan regions for centuries and is celebrated in festivals. The Goji fruit is nicknamed the “pleased berry” because of the sense of well being it is said to induce.
Goji berries and lycium bark play vital roles in traditional Chinese medicine (TCM), where they are believed to enhance immune system function, help eyesight, protect the liver, boost sperm production, and improve circulation and longevity, among other effects. In TCM terms, Goji berries are sweet in taste and neutral in nature; they act on the liver, lung, and kidney channels and enrich yin. Goji berries can be eaten raw, brewed into a tea, or prepared as a tincture.
The berries have the following properties: Yin tonic, improves vision, boost sperm production, benefits complexion, nourishes Liver and Kidney, replenishes vital essence (semen), powerful antioxidant, antimutagenic, and improves circulation, anti cancer properties.
One of the most well-known traditional properties of Goji berry fruit is its ability to improve vision. This has been documented for over fifteen centuries. Modern scientific studies have finally supplied some substantiation to this property. It turns out Goji fruit not only contains high amounts of b -carotene 8 mg/100g but this b -carotene is in a highly biologically active form which is readily utilized by the body.
Another well-known and long-documented traditional property of Goji fruit is its ability to “benefit complexion and maintain one’s beauty”; Goji is also considered to have anti-aging properties. To drug-oriented American scientists, this certainly sounds ridiculous. But various studies have shown Goji fruit to have numerous beneficial effects, including, antioxidant, immuno-potentiating, antimutagenic, hypoglycaemic, hypolipemic, hypotensive, etc., all of which contribute to the slowing down of the aging process or help us live longer.
The beautifying property of Goji fruit may have some scientific basis after all which may justify its use in skin-care cosmetics, as recent laboratory studies not only demonstrated its antioxidant effect but also its ability to increase dermal hydroxyproline level in mice, indicating increased collagen synthesis. All these effects are excellent for the skin.
Some medical researches prove that a sweet tonic decoction made from the Goji fruit has traditionally been used to lower blood pressure and blood cholesterol levels.
Goji acts mainly on the liver and kidneys. Goji fruit has traditionally been taken internally in the treatment of high blood pressure, diabetes, poor eyesight, vertigo, lumbago, impotence and menopausal complaints.
Goji fruit is harvested when fully ripe and is dried for later use. The Goji root bark is a bitter, cooling, antibacterial herb that controls coughs and lowers fevers, blood pressure and blood cholesterol levels. It is taken internally in the treatment of chronic fevers, internal haemorrhages, nosebleeds, tuberculosis, coughs, asthma etc. It is applied externally to treat genital itching. The bark is harvested in the winter and dried for later use. It has diuretic and purgative properties.
The plant has a long history of medicinal use, both as a general, energy restoring tonic and also to cure a wide range of ailments from skin rashes and eyesight problems to diabetes.
A tonic tea is made from the leaves. The fruit of many members of this genus is a very rich source of vitamins and minerals, especially in vitamins A, C and E, flavanoids and other bio-active compounds. Goji is also a excellent source of essential fatty acids, which is very unusual for a fruit.
Goji is being investigated as a food that is capable of reducing the incidence of cancer and also as a means of halting or reversing the growth of cancers.
Some of the benefits of goji berries are: inhibit tumor growth, prevent cancer, neutralize the side effects of chemotherapy and radiation, help normalize blood pressure, help balance blood sugar, combat autoimmune disease, act as an anti-inflammatory, balance immune function, lower cholesterol and blood lipids, increase calcium absorption.
The goji berries can be used in the cases of general weakness, lack of energy, aching back and joints, tinnitus, dizziness, diabetes, blurred vision, cough, wet dreams, sexual inadequacies. The internal benefits are the following – Toxic side effects of chemotherapy and radiotherapy. The external benefits are: – Burns, ulcers, bedsores, frostbite, furuncles.
Many sources note that the berry contains a full protein (as opposed to partial proteins as in bread).
Additionally, several other beneficial compounds are reported to have been learned in the analysis by the Beijing Nutrition Research Institute:
Selenium and Germanium: These are well-known anti-cancer agents.
Beta Sitosterol: This anti-inflammatory agent has been found to lower cholesterol, and has been used to treat impotence and prostate enlargement.
Zeaxanthin and Lutine: Have been known to protect the eyes.
Betaine: Produces Choline in the liver, which helps detoxification processes there. It is also known to protect DNA, enhance memory, encourage muscle growth and protect against fatty liver disease.
Cyperone: Used in treatment of cervical cancer. It is known to benefit blood pressure, heart and menstruation problems.
Solavetivone: An anti-bacterial and anti-fungal agent.
Physalin: A compound known to boost the immune system. Also found effective in treating leukemia, cancer and hepatitis B.
One of the most known and highly used products out of goji berries is goji juice. The natural juice flavoring system gives a consistently tasty flavor, and works with the product to enhance its already remarkable benefits.
In the naturally produced juice there is never any added sugar, artificial sweeteners, colors, or flavors.
